Chef Clint Wangsnes  from Chop Shop Casual Urban Eatery shows us how to make the perfect cheeseburger.

12 oz. Top Sirloin – Ground

12 oz. Short Rib – Ground

(Can substitute and standard 80/20 ground beef if grinding your own is not available option)

4 each Fresh Baked Hamburger Rolls (Potato roll is what we use, Brioche or Kaiser will work)

2 Tbsp. Room Temperature Butter

1 each Butter Lettuce Head – Washed and leaves pulled

1 Large Tomato – Sliced 1/4” thick

2 Large Dill Pickles – Sliced Thin

4 Tbsp. Montreal (Canadian) Style Seasoning

4 Tbsp. Spicy Aioli (recipe attached below)

4 Slices American Cheese

Using meat grinder, grind top sirloin and short rib and mix together lightly (be sure to not over mix the meat). Form four – 6 ounce patties and season each patty with 1 tablespoon of Montreal style seasoning (generously) on both sides and place aside. Next make Aioli:


1 oz. Pasteurized Egg Yolk

1 Tbsp. Water

1 Tbsp. Lemon Juice

1 Tbsp. Sambal Chili Paste

1 tsp. Chopped Chipotle Paste (buy “whole in adobo” then chop)

½ Cup Olive Oil

1 tsp. Salt

In Food Processor add egg, water, lemon juice, sambal, chipotle, and salt and pulse until all ingredients come together. Next turn processor on and slowly drizzle oil in until emulsified being careful not to add to fast or slow. (Tip: If mixture becomes shiny and too thick, stop adding oil and add a touch of water, then resume adding oil. You can also adjust thickness of aioli by adding water to thin or more oil to thicken)

Next light your grill or turn your grill pan on high and prep all other ingredients while your grill is heating up.

  1. Slice hamburger buns in half and butter each side with room temp butter, these will be toasted on the grill as the hamburgers are cooking.
  2. Clean lettuce and pull leaves from stem and place aside.
  3. Slice Tomatoes ¼” thick, slice pickles lengthwise as thin as possible.
  4. Remove any packaging from American cheese slices.

Grill your patties to desired temperature and add cheese to top, remove from grill immediately. Toast your bun, then garnish with Aioli, Lettuce, Tomato, and Pickle. Enjoy!
