Hearty Vegetable Quinoa Soup
1 bag frozen mixed vegetables (corn, peas, lima beans, corn, green beans)
1 bag butternut squash, cubed
28 oz. can fire-roasted diced tomatoes
15 oz. can black beans, drained and rinsed
1-cup quinoa, uncooked
6 cups vegetable broth
1/2 tsp. chili powder, cumin, salt
