A great recipe for Meals in Minutes as the meat can marinate overnight or just put directly on the grill with a little seasoning. Add some pineapple to make it sweet for the kids to enjoy. Throw over rice and beans or on a salad for yourself. It’s a big hit and fun in the summer time.
1-pound meat of your choice but make sure it cubes easily.
1 ripe pineapple
1 cup mango chunks
1 red bell pepper sliced
½ cup black beans
½ handful cilantro
½ cup cooked corn
Taco shell / bowl
Mango pineapple vinaigrette
- Cut the meat into cubes to put on a skewer. If you have time, marinate the night before in a seasonal rub. Cut the pineapple into chunks as well to put on the skewer.
- Grill on high heat until cooked thoroughly.
- Add the rest of the ingredients to the salad and serve the kabob on top.
