How to make an Oatmeal Cheesecake

Dark Cherry Cheesecake with Oatmeal Streusel Crust and Breckenridge Bourbon Glaze

Cheesecake

24 oz. Cream cheese (softened)

¾ cup sour cream

3 eggs

1 cup granulated sugar

1/2 cup heavy cream

Juice from 1 lemon

1 TBSP vanilla extract

Pinch of salt

Directions:  Whip softened cream cheese with granulated sugar until smooth.  Add in eggs 1 at a time, allowing them to incorporate into the cream cheese.  Add all other ingredients and whip until smooth.  Refrigerate and reserve for assembly.

Oatmeal Streusel Crust

Make your favorite Oatmeal cookies, cool to room temperature.  Grind into a fine powder with a food processor and combine in equal parts with brown sugar, butter, and whole oats.

Bourbon Glaze  

Measure out equal parts of Breckenridge Bourbon and white granulated sugar.  Place Bourbon in pan, and bring to a boil.  Light bourbon on fire to burn off alcohol, and remove from heat.  When flame goes out, add sugar and mix well.  Cool before using.

Assembly

Take Streusel crust, and place in desired pan,  muffin tin, baking cup etc...  Place cheesecake on top of crust approximately double the thickness of the crust.  Push in dark cherries, making sure to cover completely with cheesecake batter.  Bake at 350 degrees until cheesecake begins to brown, and show cracks.  Remove from oven, and refrigerate.  Place on plate and garnish as desired, drizzle with bourbon glaze.  Enjoy!
