Two Minute Pizza

Believe it or not, it can be made in two minutes! This is an inside/outside pizza. The cheese is inside the pizza, tucked into the pita bread. It is vegetarian, but has a great sausage taste using the Boca sausage patties. I prefer the black bean hamburger patties found in the frozen section. Be sure to thaw them out before making the pizzas. Use various pizza toppings from lower fat meats such chicken or bison, meat substitutes or just vegetables such as zucchini slices, broccoli, browned onions, fresh arugula or spinach. If using vegetables such as broccoli, I would recommend par boiling them for 1-2 minutes before using on the pizza.
Whole grain pita bread, partially sliced into 2 halves (but not cutting through the bottom layer).
1/3 cup reduced fat or fat free mozzarella cheese, coarsely grated.
1/3 cup pizza sauce of preference, reduced sodium.
Toppings: Optional meatless sausage, vegetables, spicy black bean burger (crumbled), or soy crumbles.
Garnish with fresh herbs: Basil, cilantro, or Italian parsley.
A sprinkle of parmesan cheese for topping the pizza.
Open pita and fill lightly with grated mozzarella cheese. Spread pizza sauce on top of pita and top with desired toppings. Microwave on high for 60 seconds. Garnish with fresh herbs and extra dash of cheese.
