Grilled Chocolate Orange Cakes with Tuaca Mascarpone

Chocolate Orange Cakes:




6-8 Oranges

1 box chocolate cake mix

1 cup orange juice

1/3 cup oil

3 large eggs




Cut off the tops of all the oranges. Using a reamer, juice the oranges into a bowl. Mix the chocolate cake mix according to the instructions. Fill the orange cavities with chocolate cake mix. Wrap in aluminum foil and place on grill. Cook over indirect heat 15 minutes or until a toothpick inserted into the center comes out clean.


Tuaca Mascarpone:




1 cup heavy cream

8 ounces mascarpone cheese

3 tablespoons granulated sugar

2 tablespoons Tuaca liqueur

½ teaspoon vanilla extract




Place the cream and mascarpone in the bowl.  Whip till incorporated. Add remaining ingredients, and whip until soft peaks form, about 1 minute. Refrigerate in a container with a tightfitting lid for up to 5 hours.
