Colorado Beer Marinated Flatiron Steak with AeroFarm Greens
Serves 4
Ingredients:
4 – 8oz local flatiron steaks, grassfed & free range if possible
12oz- organic tamari (gluten free) or soy sauce
12oz- Left Hand Milk Stout
1 bunch- Aero Farms Chard, Kale or Broccoli greens
finishing salt & pepper to taste
extra virgin olive oil
Method:
Whisk together tamari & beer to create a marinade. Pour over the raw steaks, cover and shake occasionally so well coated with marinade. Refrigerate overnight.
Bring steaks to room temperature while grill heats up.
When grill or skillet is hot, cook the steaks on each side until desired temperature is reached (med rare recommended)
Let the steaks rest before slicing.
Place on bed of greens so that heat from steak gently wilts the beautiful greens.
Finish with a drizzle of olive oil, sea salt & pepper.
