Salted Caramel Sticky Buns

Serves 12 ppl

CINNAMON ROLL RECIPE

Salt, Alder Smoked 1                                  tsp
CINNAMON FILLING RECIPE
Butter, Salted ¾                                 Cup                                     Softened
Brown Sugar, Cane 2                                 Cups                                     Packed
Cinnamon, Saigon 3                                 Tbsp                          Adjust more/less for desired cinnamon
Cornstarch 1 ½                                tsp
FROSTING RECIPE
Cream Cheese, Softened 8                                oz wt                            Challenge Brand
Sugar, Cane Powdered ¾                                 Cup                        More if stiffer frosting is desired
Lemon Zest 1                             Ea Lemon
Lemon Juice 1                             Ea Lemon                     Use juice from zested lemon
Vanilla Paste 2                                 Tbsp
CARAMEL STICKY BUN RECIPE
Caramel Sauce 2                                  Cup                            Your favorite sauce
Pecan Pieces, Toasted 3                                 Cups                                    Toasted
Salt, Alder Smoked 2                                  tsp                                More if desired

PREP METHOD:                       PREP TIME: 2 Hours                           COOKING TIME:  20W30 Minutes

  1. When you have started the rolling process of the cinnamon buns: Preheat your oven as stated
  2. Preheat your oven, smoker or Big Green Egg to 350 degrees – if using BGE use plate setter

FOR THE FROSTING:

  • In a mixing bowl add the softened cream cheese and mix until By hand or with hand mixer
  • Add the sugar, lemon zest, lemon juice and vanilla paste and mix until smooth and fluffy
  • Set aside in the fridge and hold until When needed let come to room temp, then serve on the side with warm salted caramel sticky buns

FOR THE CINNAMON FILLING:

  • Soften the ¾ cup of butter and set aside
  • In a separate bowl mix the brown sugar, cinnamon and cornstarch and set aside

 

FOR THE CINNAMON BUN:

  1. In a large stainless steel mixing bowl add the 1 cup water and ¾ cup of sugar, then sprinkle yeast over the top and using a small whisk gently mix until incorporated
  2. Allow the yeast to bloom or activate for 5?10 minutes or until starts to get frothy and starts to smell yeasty
  3. Next add: Buttermilk, eggs and 6 Tbsp of softened butter and mix with wooden spoon
  4. Add 4 cups of flour 1 cup at a time and mix well
  5. Add the remaining flour until the dough gets firm and starts to form a ball, it should pull away from the bowl easily and not stick
  6. Remove onto a lightly flour dusted counter top and knead for 5 minutes, add more flour as needed to retain ball and not be too sticky
  7. Once kneaded, place into a ball shape and cover with a towel
  8. Melt 1 Tbsp of butter and rub the dough ball, set into the stainless bowl and cover with plastic wrap
  9. Allow to bench/counter proof in a warm area for 60?90 minutes or until doubled in size
  10. Lightly flour dust the counter
  11. Take out the proofed dough, punch down to remove air and with a floured rolling pin roll into an 18x24 rectangle
  12. Spread the ¾ cup softened butter from the filling recipe onto the dough, leaving a row/border at the bottom of the long side not Should be the long side opposite of you
  13. Sprinkle well with the sugar, cinnamon and cornstarch mixture leaving a row/border at the bottom of the long side not Should be the long side opposite of you.
  14. Next starting on the edge towards you, roll into a When you get to the bottom part that is not buttered or sugared, wet that edge slightly with water and finish the roll. Allowing that edge to “glue” or seal shut.
  15. Cut into 12 equal pieces using a serrated knife
  16. Hold on the floured counter

FOR THE STICKY BUN PAN:

  1. Using food spray or non?stick spray
  2. Spray 2ea 9x13 pans or ceramic baking pans
  3. Place 1 Cup of caramel sauce on the bottom, next sprinkle on 1 ½ cups of toasted pecans and top with 1 tsp of smoked
  4. Load into the pan 6 ea cinnamon Placing them 2 wide by 3 long
  5. Repeat this process for pan # 2

BAKING YOUR STICKY BUNS:

  1. Ensure your oven or smoker or Big Green Egg is preheated to 350 degrees
  2. For Big Green Egg ensure you have your plate setter in with the legs of the plate setter down
  3. For the smoker and big green egg, choose a nice fruit wood for that added smoke effect
  4. Cooking times may vary depending on what you are cooking on
  5. Place both pans into the oven and bake uncovered for 10 minutes, then rotate the pans
  6. Bake for an additional 10?20 minutes or until golden brown and fully cooked
  7. Using hot pads Remove from the oven and allow to cool for 5 minutes
  8. Using a paring knife go around the edge of the pan to ensure the buns are not stuck and remove easily
  9. Place a pan spray coated cookie sheet over the sticky bun pan, invert the sticky buns and cookie sheet and slowly remove the cooking pan revealing your salted caramel sticky buns
  10. Serve with Frosting on the side
