Chocolate Almond Cherry Granola Bars

What you Need:

2/3 Cup Honey

1/2 Cup Creamy Almond butter

1/4 Cup packed Brown Sugar

1/4 Cup Cocoa Powder

2 teaspoons Vanilla Extract

1/2 teaspoon Kosher Salt

2 Cups Rolled Oats 

2 Cups Crispy Rice Cereal 

1 Cup mini Chocolate Chips

1 Cup Dried Cherries

What to Do:

1.) Line an 8x8-inch pan with Parchment Paper leaving overhang, spray with cooking spray; set aside.

2.) In a large, microwave-safe bowl combine Honey, Almond Butter, Brown Sugar, and heat on high power for 1 minute intervals; stirring to combine after each minute. Repeat at least twice.

3.) In different stir ins- Add vanilla, cocoa, and salt. Whisk to combine. Then add Oats and stir to combine. Then add rice cereal 1 Cup at a time, and stir. Then add mini chocolate chips and stir to combine.

4.) Turn mixture out into prepared pan and pack it down firmly with a spatula or hands.

Allow pan to sit until mixture sets, and hardens.

5.) Pulling up on the Parchment overhang, remove set mixture from pan and place on cutting board, and slice into bars. Enjoy!
