4 cups seedless watermelon (about 3# with rind), peeled and finely diced
1 cup WTRMLN WTR
1 large cucumber, peeled and finely diced
1 red bell pepper, finely diced
¼ cup chopped fresh basil, plus additional for topping
¼ cup chopped fresh parsley, plus additional for topping
2 tablespoons chopped fresh mint, plus additional for topping
2 cloves garlic, minced
1 lemon, zest and juice
2 tablespoons extra virgin olive oil
Salt to taste
Mix ingredients together in a large bowl and allow flavors to combine for at least 5 minutes.
Transfer half of the mixture to a blender and puree until smooth. Add back to watermelon mixture and stir.
To serve, ladle into bowls and top with fresh herbs. Refrigerate for up to 1 day.
