How to grill pizza

Chef Jason Morse from 5280 Culinary shows us how to grill pizza.

Chicken artichoke pizza

Dough, Pizza 1 Ea 16” Sized Dough

Sauce, Pizza or Tomato ½ Cup

Cheese, Provolone /Mozz Blend ½ Cup Evenly Spread

Cheese, Parmesan Shredded ¼ Cup Evenly Spread

Artichoke Hearts, Drained 1 Cup Quartered

Peppers, Red Roasted ¼ Cup Sliced

Mushrooms, Crimini ½ Cup Sliced

Peppers, Banana or Pepperoncini Taste Taste Sliced / Shaved

Chicken, Breast Red Bird

Farms

12 Ounces Cooked, sliced

Spice, Here Fishy Fishy Taste Taste Sprinkle on after cooking

PREP METHOD: PREP TIME: 30 minutes COOKING TIME: 12-14 MINUTES

  1. Season the Red Bird Chicken (Using our CLUCK seasoning), grill until done. Cool and slice. Sliced, grilledchicken can be frozen for easier pizza building
  2. On a floured surface, roll out the room temp pizza dough to desired thickness
  3. Place the pizza dough onto the stone if baking, or onto pizza paddle if using grill. Be sure to build fast,

as the dough gets wet from sauces and toppings, it will stick to the paddle

  1. Spread the pizza sauce using the back of a spoon, until evenly spread
  2. Top with the Cheese, Artichokes, Peppers, Mushrooms, Banana Peppers and Chicken
  3. For Big Green Egg Cooking: Using plate setter on highest level, add your pizza stone and allow to heat up, EGG should be full open, at 600 degrees
  4. EGG Cooking – Using floured pizza paddle pick up pizza and slide onto pizza stone
  5. EGG Cooking – Bake with egg closed, at 600+ degrees for approx. 12 -14 minutes or until done
  6. GRILL COOKING – Preheat grill to highest setting, preferably 550 + degrees
  7. GRILL COOKING – Set the pizza stone, with pizza on it onto the grill and close the lid and Cook for 12-16 minutes or until done
  8. OVEN COOKING – Preheat oven to 450 Degrees
  9. GRILL COOKING – Set the pizza stone, with pizza on it onto the grill and close the lid
  10. GRILL COOKING – Cook for 12-16 minutes or until done
  11. Once fully cooked, remove from cooking method, place on cutting board, top with Fishy Fishy Herb

Seasoning and slice. Enjoy

 

 

 

Steak and potatoes pizza

Serves 4

Ingredient Qty Measure Notes

Dough, Pizza 1 Ea 10” Sized Dough. Fresh or Par Cooked

BBQ Sauce, High Altitude or Low Country ¼ Cup Spread evenly onto dough

Cheese, Asiago or Parmesan ½ Cup Shredded

Potatoes, Mashed 1.5 Cup Warmed – Perfect way to use leftover Mashed

Bacon, Applewood Cooked ¼ Cup Chopped

Cheese, Cheddar Blend ½ Cup Shredded

Steak, Flank Cooked 1 Cup Shaved

Peppers, Banana or Pepperoncini Taste Taste Sliced / Shaved

Shoestring Potatoes ½ Cups As Garnish

Rub, Fishy Fishy Herb

 

Rub Taste Taste Sprinkle on after cooking

PREP METHOD: PREP TIME: 15 minutes COOKING TIME: 8-16 MINUTES

  1. On a floured surface, roll out the room temp pizza dough to desired thickness or use a pre cooked

dough

  1. Place the pizza dough onto the stone if baking, or onto pizza paddle if using grill. Be sure to build fast,

as the dough gets wet from sauces and toppings, it will stick to the paddle

  1. Spread the BBQ sauce using the back of a spoon, until evenly spread
  2. Top with the Cheese, warmed mashed potatoes, bacon, cheese, flank steak and banana peppers.
  3. For Big Green Egg Cooking: Using plate setter on highest level, add your pizza stone and allow to heat

up, EGG should be full open, at 600 degrees

  1. EGG Cooking – Using floured pizza paddle pick up pizza and slide onto pizza stone
  2. EGG Cooking – Bake with egg closed, at 600+ degrees for approx. 8 -12 minutes or until done, check

pizza at 5 minute mark and rotate

  1. GRILL COOKING – Preheat grill to highest setting, preferably 550 + degrees
  2. GRILL COOKING – Set the pizza stone, with pizza on it onto the grill and close the lid and Cook for 12-16

minutes or until done

  1. GRILL COOKING – Set the pizza stone, with pizza on it onto the grill and close the lid
  2. GRILL COOKING – Cook for 12-16 minutes or until done
  3. Once fully cooked, remove from cooking method, place on cutting board, top with Shoestring potatoes

Fishy Fishy Herb Seasoning and slice. Enjoy
