Asian inspired dressing for spiralized veggies
½ c vegetable or canola oil
3 T soy sauce
1 T rice vinegar
1 T agave
3 T sesame seeds
Mix all ingredients and pour oven veggies right before serving.
Zucchini ribbon frittata
½ large zucchini, spiralized
5 large eggs, beaten
¼ 2% milk
2 T oil
Optional: chives, grated cheese, cherry tomatoes
Preheat oven to 350 degrees F. Heat oil in small oven safe pan. Add zucchini and sautee until slightly softened. Add milk and beaten eggs then add to zucchini. Place pan in oven for 15-20 minutes or until middle has cooked through. Enjoy!
Raw pear and whipped cottage cheese
2 small pears, spiralized
1 cup low fat cottage cheese, blended in food processor until smooth
½ cup toasted or raw walnuts
¼ cup sliced figs or dates
