Daybreak Delights: Honey Pie with Brie

Honey Pie with Brie



Pre-made piecrust

¾ cup honey

1 stick melted butter

½ cup granulated sugar

1 tbs flour

½ tsp salt

2 tsp  vanilla extract

½ cup heavy whipping cream

3 eggs

2 tsp lemon juice

1 round wheel of brie, room temperature



Preheat oven to 375 degrees.  Place pie crust in a 9 inch pie pan and set aside.  For the filling, in a saucepan over medium heat, melt butter and add flour, sugar, and salt.  Add vanilla and honey and remove from heat.  Beat eggs in a small bowl then add butter, sugar, flour mixture.  Add lemon juice and cream, stirring until combined.  Pour filling into piecrust and cover the edges with aluminum foil.  Bake 45-55 minutes.  The filling will retain a little jiggle even when done.  Allow the pie to cool completely.  Once the pie is cool, preheat the oven again to 250 degrees.  Flatten the brie slightly and place on the pie.  Warm the pie in the oven about 10 minutes to fully melt the brie.  Drizzle with some additional honey and serve immediately
