Grateful Bread  has been churning out some of the best brioche, ciabatta and baguettes for some of the finest restaurants in and around Denver for years, and NOW you can buy these crusty creations YOURSELF every Saturday at 425 Violet Street in Golden, starting with the grand opening this Saturday, Dec. 5th! See recipe below for Cranberry Walnut Grateful Bread:

Water 2.25 oz

Milk 5.75 oz

Egg     1 large

Butter, cubed 1.5 oz

Yeast, dry active 10 grams (.35 oz)

Flour         1 lb 3.75 oz

Sugar 2.25 oz

Salt 0.25 oz

Cranberries, dried 5 oz

Walnuts, chopped 3.25 oz

 

* Combine water, milk, eggs, butter – add to dry ingredients

* Mix until combined

* Add cranberries & walnuts, mix until evenly distributed

* Knead dough by hand

* Place dough in bowl, cover & proof (let rest) 30 – 60 minutes

 

* Cut and shape dough into desired size(s)

* Place on greased baking sheet

* Cover and proof

 

* Pre-heat oven to 350 degrees

* Egg wash shaped dough

* Score dough with a sharp knife

* Bake at 350 for 18 to 25 minutes, turning pan once at about 10 minutes

(Finished internal temperature should be ~180 degrees)
