Salted Maple Pecan Pie Bars

1 cup all purpose flour

1/3-cup brown sugar

½ cup butter, softened

1 large egg

1/3 cup brown sugar, packed

1/3-cup maple syrup or pancake syrup

1-tablespoon vanilla extract

1-cup pecans

¼ cup caramel sauce

Sea salt to taste

Preheat the oven to 350 degrees F.  Line an 8x8” baking pan with aluminum foil and spray with cooking oil spray.

To make the crust: In a large bowl, add flour and brown sugar.  Using two forks or a pastry cutter, cut butter into dry ingredients.  Work until the butter is evenly distributed and pea sizes and crusty pieces form.  Place dough in prepared pan and push to all corners until pan is covered with smooth dough.  Bake 15-18 minutes or until crust is set.  Don’t over bake.

Filling: In a larger bowl combine, egg, brown sugar, maple syrup, and vanilla.  Stir in pecans.

Carefully pour mixture into the pan and evenly distribute pecans.  Make sure pecans are flat to prevent exposed edges from burning.  Bake again about 15-20 minutes or until center is set and does not jiggle.  Bars will set up more as they cool.  Place bars on a wire rack to cool for at least 1 hour before drizzling with caramel and sea salt.  Bars will keep for up to 5 days in an airtight container.  Bars can also be frozen.
