Port Poached Grapes over Ice Cream
1 cup Port wine
1 cinnamon stick
3 cups halved red or black grapes
6 scoops ice cream or low fat frozen yogurt
In a saucepan, add wine, orange peel, cinnamon stick, honey and bring to boil until honey dissolves. Reduce heat to medium-low until sauce is reduced to approximately 1/3 cup (about 15-20 minutes). Remove and discard orange peel and cinnamon stick. Stir in grapes. Allow the mixture to site at least 1 hour but no more than 2 hours at room temperature or place in an airtight container for 3 days. Serve mixture over ice cream or low-fat frozen yogurt.
