Pumpkin Spice Latte

Makes 1 serving

3 Tbsp. pumpkin puree

1/8 tsp. pumpkin pie spice

1-2 Tbsp. Stevia in the Raw

¼ tsp. vanilla extract

¾ fat free or unsweetened vanilla almond milk

½ cup strongly brewed coffee or 1 shot espresso

 

  1. In a bowl or mug combine pumpkin puree, pumpkin pie spice, Stevia in the Raw, vanilla extract. Stir in milk.
  2. Heat milk mixture in the microwave for 1 minute.
  3. Pour mixture into a blender and blend on high for 30 seconds-1 minute or until frothy.
  4. Pour coffee into a mug and top with frothy milk. Sprinkle with pumpkin pie spice to garnish.

Lightened Up Eggnog

Makes 7 servings

 

2 cups 1% milk

1 ½ cups evaporated fat free milk

¼ tsp. freshly grated nutmeg

4 cloves

2 tsp. vanilla extract

½ tsp. rum extract (optional)

4 egg yolks

1/3 cup Stevia in the Raw

 

  1. Whisk egg yolks and set aside.
  2. In a heavy bottom saucepan, heat 1% milk, evaporated milk, nutmeg cloves vanilla extract and rum extract over low heat until it begins to simmer, stirring regularly.
  3. Slowly add half of the milk mixture to the egg yolks, stirring constantly, to temper the eggs. Pour the mixture back into the saucepan and heat on medium low heat until the eggnog thickens and reaches 165°F.
  4. Pour the mixture through a fine mesh strainer into a bowl.
  5. Refrigerate for 8 hours.
  6. Garnish with freshly grated nutmeg before serving.

Peppermint Hot Chocolate

Makes 1 Serving

 

1 Tbsp. unsweetened cocoa powder

1 Tbsp. Stevia in the Raw

¼ tsp. vanilla extract

1-2 drops peppermint extract

1 cup unsweetened almond milk or fat-free milk

2 Tbsp. Reddiwhip whipped topping

 

  1. Combine cocoa powder, stevia, vanilla extract and peppermints extract in a mug.
  2.  Add one teaspoon of almond milk and stir until the mixture becomes a paste.
  3. Stirring constantly, gradually add the remaining almond milk.
  4. Microwave on high for 1 ½ --2 minutes until hot.
  5. Top with Reddiwhip topping.
