One of the best parts about summer is all the fresh fruit we get and that includes MANGOES! King Soopers registered dietitian Jeannie Schwendtner shows some fun ways to whip up this delicious fruit that everyone is sure to love.



Mango Frozen Yogurt

Adapted from Eatingwell.com

Makes 4, ½ cup servings

2 ¼ cups frozen mango (about 2 mangos)*

2/3 cup non-fat, plain Greek yogurt

Place the mango and yogurt in a food processor and process until smooth. Store in the freezer.

*To freeze mango, cut mango into cubes and freeze on a baking sheet in a single layer.

Peanut Butter Mango Roll-Ups

Makes 6 servings

1/3 cup crunchy peanut butter

1 tablespoons honey

¼ teaspoon cinnamon

3 (8 inch) whole wheat tortillas

1 medium ripe mango, peeled, pitted and cut into 1/2-inch thick strips

Stir together peanut butter, honey and cinnamon in a small bowl. Spread over tortilla and place mango over 2/3 of the surface. Gently squeeze rolls to secure ingredients then cut into 1/2-inch thick slices.

Mango Berry Rotini Salad

Makes 4 servings


2 tbsp extra virgin olive oil

2 tbsp raspberry vinegar

1 tsp sugar

1 tsp poppy seeds

¼ tsp salt


1 cup (4 oz) whole-wheat rotini pasta, uncooked

1 ripe Mango

1 cup raspberries

1 cup blueberries

2 cups fresh baby spinach

¼ cup reduced-fat feta cheese

In a small bowl, whisk vinaigrette ingredients; set aside. Boil water and cook rotini according to package instructions. Drain cooked rotini and rinse in cool water. While rotini is cooking, cut mango into chunks, removing peel and pit. Place salad ingredients in a large bowl; drizzle with vinaigrette. Toss gently.
