It's Peanut Butter Jelly time! Chef Karen Russell says her take on the classic sandwich that's being toted around Denver in the purple truck isn't exactly conventional.

"It's much more sophisticated," she said.

We tried the Savory Spicy Thai PBJ, which features Thai spicy peanut butter, orange marmalade, coconut, crushed peanuts and basil. We finished with the blueberry pie sandwich, with almond butter, jam and pie crumbs.

Though we didn't try it, the bacon lovers have to check out the Figgy Piggy, with goat cheese, almond butter, fig jam, honey and lots of bacon.
