Cool summer desserts with the Corner Office Restaurant and Martini Bar!

Recipe for Psychedelic Boat Trip, at The Corner Office Restaurant + Martini Bar


  • 2 scoops avocado ice cream, or substitute preferred flavor
  • 1 banana
  • 1/4 cup buttermilk
  • 1/4 cup panko crumbs
  • 1 teaspoon vegetable oil
  • 2 tablespoons Nutella spread
  • 2 tablespoons coconut
  • 2 tablespoons chopped pistachios
  • Luxardo cherries
  • Heavy whipping cream
  • Confectioner’s sugar

To prepare:

  • Soak banana in buttermilk for 1 minute and then roll it in the panko breadcrumbs
  • Heat oil in pan and flash fry banana on high heat, until thin crust forms, creating a fritter (note: can also use a deep fryer)
  • Using a hand or stand mixer, begin whipping the heavy cream, adding in confectioner’s sugar to taste (approx. 2Tbps per cup of cream). As cream begins to stiffen, gently stir in coconut flakes.
  • Spread Nutella on serving plate, creating a layer of the spread
  • Add two scoops of ice cream directly on top of Nutella
  • Cut frittered banana in half, placing on either side of ice cream
  • Add two scoops of whipped cream
  • Garnish with pistachios and cherries
