Zucchini Crudo

(serves 4)

1 - Medium zucchini

1 lemon

1 tablespoon white truffle oil

2 oz shaved Parmesan or granna padano

1 tablespoon olive oil

2 teaspoon fleu di sel

1/8 cup crushed toasted almonds


1. Cut zucchini on the bias. Lay out on platter and sprinkle with fleu di sel

2. Squeeze 1/2 of a lemon over all zucchini

3. drizzle both olive and truffle oil over the zucchini

4.Shave Parmesan over the zucchini and sprinkle with crushed toasted almonds,and pepper
you may squeeze the rest of the lemon over if desired
