Banana & Coconut Pecan Porridge with Whole Grain Oats, Barley, Amaranth, and Flax

National Healthy Eating Day is upon us and it's a great time to take a look at super tasty and quick methods of incporporating wholesome goodness into our diets. This overnight Hot Cereal incporporates grains that will take your tastebuds across the globe from Amaranth with it's routes in South America to the carribean flavors of coconut and cinnamon. Often whole grains are dificult to include in dishes because they take a long time to cook. This recipe completely, debunks the theory, by giving the grains an overnight soak and a headstart. Soaking the grains essenitally hydrates the kernels and in the morning all they need is a quick cook.

1 Cup Instant Whole Grain Baby Oats
1/4 cup Whole Grain Sustagrain Barley Quick Flakes
1/4 Cup Whole Grain Amaranth
1 Tablespoon Flax Seed, Ground
1 Teaspoon Salt
2 Tablespoons Brown Sugar
3 Cups Coconut Milk, So Delicious Dairy Free
1 1/2 Teaspoons Cinnamon
2 Tablespoons Coconut Flakes
2 Tablespoons Pecans, Chopped
1/3 banana
1 Tablespoon Quinoa Crisps or Brown Rice Crisps

 

Prepare
First, try and find all of your ingredients and set them out on the counter.
The only item you will need is a clean mason jar with a tight fitting lid, you can get these at most supermarkets.
Next, wash your hands, take a deep breath, this is going to be easy!
The Night Before:
Set your mason jar out. Add the Quick Oats, Barley Flakes, Amaranth Seeds, Ground Flax Seed, Salt, Brown Sugar, Cinnamon, and coconut flakes to the mason jar.
Next, tightly screw back on your mason jar lid and give it a few shakes.
Lastly, place the mason jar in the refrigerator to rest overnight.
In the Morning:
Pour the mason jar ingredients into a small skillet and set the heat level on your stove to medium (level 6).
Gently bring the cereal to a simmer. Once you are simmering, wower the heat to keep it at a gentle simmer.
Cook the hot cereal for 2-3 minutes or until the sauce is mostly evaporated and the cereal his sufficiently cooked through.
Using a spoon, transfer the whole grain hot cereal to a serving bowl and top with your Bananas, Coconut, Pecans, Quinoa (or rice) Crisps, and remaining Cinnamon.
Marvel, you just made a super tasty whole grain breakfast in the morning in under 10 minutes!
