Daybreak Delights: Sweet Corn Fritters

Sweet Corn Fritters

What you Need

1 &1/2 cups Whole Milk

1/4 cup Solid Vegetable Shortening

1/4 cup sugar, plus 1 teaspoon

1/4 cup leftover Mashed potatoes

1 envelope dry active yeast

3 &1/2 cups Flour

1 &1/4 teaspoon of Kosher Salt

1 teaspoon Baking Powder

Vegetable oil pan spray (For hands and or scoop)

1 Egg

2 Ears of Fresh Sweet Corn-Kernels cut off cob

Liquid Vegetable Oil- for frying

Powdered Sugar for dusting

What To Do

In a bowl of an electric mixer fitted with a paddle attachment, proof the yeast, by combining the Yeast with 1/4 cup Warm Water (110 degrees) and 1 teaspoon of sugar; set aside, until mixture is frothy and foamy.

Prepare a large plastic bowl, by spraying the inside with pan spray, and set aside.

In a Microwave safe bowl, combine Milk, Shortening, sugar, and mashed potatoes. Heat mixture stirring occasionally, until shortening is melted and mixture is an even consistency.

Add the Flour, Salt, and Baking Powder, to the bowl of the mixer (once Yeast is proofed)  and slowly pour the milk mixture into the mixer as the mixer is running on low. Once all the liquid has been added, add egg and increase the mixer speed slowly from low to high, allowing the dough to form and beat in the bowl. add corn kernels with dough begins pulling from the side of the bowl of the electric mixer.

Transfer dough to the prepared bowl. Cover with plastic wrap sprayed also with pan spray, and let dough the rise until it doubles in bulk, about 2 hours. Punch dough down and allow it to rise again, about 1 hour more.

Pinch dough off into 1 inch pieces using your hands sprayed with pan spray of a small scoop-sprayed with pan spray- HINT:You do not want large clumps, keep the fritters small!

Heat vegetable oil in a fryer or large pot to around 375 degrees.

*Do not over crowd the pot or fryer with the dough pieces. Flip the dough pieces to get an even color on each side during frying. Fry Fritters until golden brown, about 1 1/2 minutes per side. Use a slotted spoon or Japanese spider tool to remove fritters from hot oil, allow excess oil to drip off spoon or spider and place fried fritters on a Large paper towel lined platter. Transfer fritters to a large metal bowl and toss in powdered sugar. Transfer Fritters to prepared baking sheet or tray, serve hot or hold in a 200 degree oven until time to serve but not longer than 30 minutes.
