Grilled Pizza

Chef Natalie Schwab, the culinary demonstrator for Johnson & Wales University, shows us how to make Grilled Pizza.

Green Goddess Pizza

Ingredients:

  • Pre-made Pizza Dough (find in prepared foods section of your local King Soopers)
  • 1 cup basil pesto
  • 2 oz. Fontina cheese
  • 6 oz. goat cheese
  • 1 zucchini shaved into ribbons
  • 1/2lb thin asparagus (if think asparagus is all that is available, you can also shave it into ribbons)
  • Olive oil- for drizzling
  • 6 leaves of basil, gently torn.
  • 2 cups baby kale
  • 2 tbsp chives
  • Handful of arugula

Directions:

  1. Allow pre-prepared pizza dough to rise according to package instructions.
  2. Preheat your grill to med-high heat.
  3. In a bowl toss the kale, zucchini, and asparagus with a drizzle of olive oil and salt and pepper. Place the greens onto a sheet of foil or on a veggie roasting basket on the grill and gently cook for 3-5 minutes. Remove from the grill and set aside.
  4. Roll or stretch your pizza dough to form a round, set aside. (does not need to be perfect, so don’t stress about getting it in a perfect circle.)
  5. Using a basting brush, gently brush the bottom of your pizza dough, as well as brushing the grates of your grill with olive oil. Place oiled side of dough directly onto your grill. Allow to cook 1-2 minutes, depending on the thickness of your pizza crust.
  6. Using your basting brush oil the top side of your pizza dough and flip over. Allow to cook 1-2 additional minutes.
  7. While the dough is still on the grill, top the crust with the pesto and then the green veggie mixture as well as the fontina and goat cheese. Close the grill and allow cheese to melt.
  8. Remove pizza from the grill and gently tear the basil on the top, then add the arugula and chives just before service.

Grilled Burrata Pizza

Ingredients:

  • Pre-made Pizza Dough (find in prepared foods section of your local King Soopers)
  • 1 cup cooked, sliced chicken breast (about one 8-ounce breast)
  • 1 baseball sized ball (1.5 pounds) of Burrata cheese (find in the Deli section at local grocery store)
  • 1 pound cherry tomatoes
  • 1/2 cup parmesan cheese grated
  • 1/3 cup Olive oil
  • 6 leaves of basil, gently torn.
  • Red pepper flake to taste

Directions:

  1. Allow pre-prepared pizza dough to rise according to package instructions.
  2. Preheat your grill to med-high heat.
  3. Slice the tomatoes in half or thirds depending on the size. Toss with olive oil and salt and pepper lightly. Place the tomatoes onto a piece of tin foil and roast on the grill for 10-15 minutes or until they start to shrink and caramelize. Remove from barbeque and set aside.
  4. Roll or stretch your pizza dough to form a round, set aside. (Does not need to be perfect, so don’t stress about getting it in a perfect circle.)
  5. Using a basting brush, gently brush the bottom of your pizza dough, as well as brushing the grates of your grill with olive oil. Place oiled side of dough directly onto your grill. Allow to cook 1-2 minutes, depending on the thickness of your pizza crust.
  6. Using your basting brush oil the top side of your pizza dough and flip over. Allow to cook 1-2 additional minutes.
  7. While the dough is still on the grill, top the crust with the tomatoes, and gently rip the burrata into chunks and place across the top of the pizza. Cover the grill and allow to set for 1-2 minutes. Open the grill.
  8. Remove pizza from the grill and gently tear the basil on the top just before service.
