You-will-never-buy crackers again
These crackers are addicting. Perfect for the opening of spring on your deck with your favorite appetizer and beverage. The base is almond flour. Only four simple ingredients and it’s so fabulous, you will never want to buy a box of crackers again. Reading the familiar icon cracker that starts with an “R” and ends with a “Z” has 17 ingredients. A popular gluten free cracker has 29! It is true, less is better…just read the labels and bake fresh.
1 large egg
¼ t salt & ½ t pepper plus extra for topping
1¾ cups (5 7/8 ounces) almond flour, King Arthur Almond Flour is the best
¼ cup shredded Parmesan cheese, plus extra for garnishing
Preheat oven to 3500 F. Whisk together the egg, salt and pepper. Add the almond flour. Stir to combine. I have found that your hands work the best. Mix until combined. Add the Parmesan cheese. Lay down a sheet of parchment. Place the dough onto the parchment paper. Layer another sheet. With a rolling pin, roll the dough to 1/8 thickness, approximately 10 x12 inches. Cut into 1½ ” squares. Place the squares onto a non-stick baking sheet. Sprinkle with extra cheese and a dash of pepper on each square. Bake for 15-17 minutes until edges become brown. Cool and serve.
