Meal Makeovers: Mashed Cauliflower

Healthy Julie shows us how to make Mashed Cauliflower (instead of potatoes) for Thanksgiving Dinner.

VEGAN MASHED CAULIFLOWER

Serves: 2 cups
INGREDIENTS
  • 1 med cauliflower
  • ½ small celery root
  • Healthy Julie’s Sour Cream
  • 1 tsp onion powder
  • 1 tsp sea salt
  • ground black pepper to taste
  • 2 Tbl chives, finely chopped
INSTRUCTIONS
  1. Cut the florets off of the cauliflower stem and place in a large stock pot. Slice the skin off of thte celery root and cut the root into cubes. Place in the stock pot along with enough water to fill an inch over the vegetables. Bring water to a boil and simmer at a medium boil for 20 minutes.
  2. When the vegetables are finished cooking, place them in your blender along with 1 cup of Healthy Julie's Sour Cream, onion powder, and salt. Blend on medium speed until everything is well-combined.
  3. Transfer to a bowl and garnish with chives and ground black pepper.
