Rickoli Brewery is carving out its own niche in the Colorado Microbrewery scene. Owner Rick Abitbol brews all of his beers as gluten removed. Most gluten free beer is made with an alternate grain such as sorghum or millet. But Rick is using barley and making regular beer, then using an enzyme that breaks down the gluten. What your left with is great tasting, gluten removed beer. And the advantage of using the enzyme is he can use it in any style beer!
