The cold temperatures are here. Our favorite King Soopers dietitian has a yummy crock pot meal that will satisfy and warm up your whole family.

  1. Crock-Pot Pumpkin Chili
    Makes 6 servingsIngredients
    1 lb. lean ground beef or turkey (at least 93% lean)
    1 medium onion, chopped…
    1 large red bell pepper, diced
    1 large green bell pepper, diced
    1 jalapeno pepper, chopped (optional)
    1 (15 oz.) can no salt added kidney beans, rinsed and drained
    1 (15 oz.) can no salt added black beans, rinsed and drained
    1 (14.5 oz.) can fired roasted diced tomatoes
    1 (14.5 oz.) can diced tomatoes with jalapenos
    1 cup reduced sodium beef or chicken broth (depending on whether you used beef or turkey)
    1 (15 oz.) can pumpkin puree
    1 Tbsp. chili powder (Hot Mexican Style is great!)
    2 tsp. cumin
    ½ tsp. black pepper
    ¼ tsp. cinnamon (optional)

    Directions
    Heat a large skillet over medium heat. Add ground beef and brown until fully cooked. Pour beef into a colander and rinse under hot water to remove excess grease.

    Coat a slow cooker with cooking spray. Add beef, and remaining ingredients. Stir well to combine. Cook on low heat 6-8 hours. Serve hot. Garnish with reduced fat cheese, non-fat Greek yogurt or avocado if desired.

    *For extra spice, replace the fire roasted tomatoes with a second can of diced tomatoes in jalapenos.
    *This recipe can also be made in a large pot on the stove, if you do not have a slow cooker.
