Grilling up sugarcane shrimp sandwiches with Chef Ben
Chef Ben of Tony’s Market was back Wednesday telling us about his sugarcane shrimp skewers — a great addition to anything from pasta to salad to sandwiches.
Ben cooked the shrimp in about six minutes and threw them on a sandwich for us. Think Thai-Style Shrimp meets a Cajun Po’ Boy, Ben said.
When it came to the sauce for the sammy, Ben went with a roasted garlic peanut sauce cut with a bit of mayonnaise. He added some pineapple slices, cucumber, green onions and chopped romaine lettuce and shoved it all in an Israeli-style pita bread.
