3 metro Denver restaurants make list of 50 best new restaurants in America

DENVER — Bon Appétit Magazine names Denver’s Pinche Tacos one of the 50 Best New Restaurants in America.

“We take the traditional Mexican street food taco and put a modern twist on it,” said owner Kevin Morrison.

Morrison opened Pinche Tacos three years ago with a food truck. The response was overwhelming so the brick and mortar location was the logical next step.

“You can come here and try different foods that you would get in fine dining establishments, but we`re all about value as well. I like to think we can do anything with a taco,” Morrison said.

The ingredients are mouth watering: carnitas, citrus marinated skirt steak, and triple-cooked Colorado beef tongue, just to name a few. Put them on fresh corn tortillas and you have what Bon Appétit considers some of the best food in the country.

“It’s very humbling to think that all we do is tacos, and to get that kind of recognition on the national level, it’s pretty cool,” Morrison said.

The crowd during any given hour is proof people love their Pinche. They come for the tacos and stay for a great time.

Two other local restaurants made Bon Appétit’s list: Denver’s Linger and Boulder’s Pizzeria Locale. Pinche Tacos plans to open another location early next year in the Highlands.
