Meals in Minutes – Quinoa Burgers
Chef Robert Bogart from Elways Downtown shows us how to make Quinoa Burgers.
1 cup rinsed, uncooked Quinoa
1 cup Wheat Bread, cubed
¼ cup Water
½ cup Pistachios, shelled
2 Garlic Cloves
1/2 tsp. salt
2 oz. Parmesan cheese
3 oz. Goat Cheese
1 ½ tbsp. Olive Oil
Bring 2 cups water to a boil. Add quinoa; cover and reduce heat to low. Cook 15 minutes until tender.
Put egg, bread and water in a bowl and mix -- let stand for about 5 minutes.
Place shallots, pistachios, garlic, and salt in a food processor, chop finely. Combine cooked quinoa, egg bread mix, parmesan and half of the olive oil -- mix well. Last add goat cheese and mix gently.
Heat olive oil in a non-stick pan over medium high heat. Using a large ice cream scoop, scoop quinoa mixture into skillet. Using a spatula flatten mound.
Cook 6 to 8 minutes turning once. Add cheese or any fixings you enjoy on your burgers. Place quinoa burger between a toasted hamburger bun. Enjoy!
